Our raw milk cheese is made from the unpasteurized milk of our grass-fed cows, aged the traditional way so the flavor deepens and the living cultures stay intact. Raw milk is what real cheese was always made from, long before milk got cooked and the character cooked out of it. We craft a wide range, from sharp and reserve cheddars to gouda, colby, baby swiss, and pepper and smoked varieties, in blocks and shred. Each one starts with the same clean milk and earns its flavor through time, not additives. This is cheese with a backbone, the kind that makes the shrink-wrapped block taste like nothing at all.
