2 lbs grass-fed ground beef

3 cups pinto beans

3 cups kidney beans (or 2 – 15 oz cans, drained)

3 cups black beans (or 2 – 15 oz cans, drained)

5 cups fresh crushed tomatoes

2 medium bell peppers, chopped (about 3 cups)

2 medium candy onions, chopped (about 3 cups)

2 cloves garlic, minced

3 tbsp chili powder

1 tbsp cumin

1 tsp dried oregano

Jalapenos, to taste

Salt and pepper, to taste

Fresh cilantro, for garnish

Sour cream, for serving

Shredded cheddar cheese, for serving
Instructions
Prepare the chili base: In a slow cooker, combine the beans, crushed tomatoes, bell peppers, onions, garlic, chili powder, cumin, oregano, and jalapenos. Stir well to combine.
Cook the beef: In a skillet over medium heat, brown the ground beef with a pinch of salt and pepper until fully cooked.
Combine and slow cook: Add the cooked beef to the slow cooker and stir to incorporate. Cook on low for 8–10 hours or high for 5–6 hours until flavors meld and chili is thick.
Serve: Spoon chili into bowls and top with sour cream, shredded cheddar, fresh cilantro, and additional jalapenos if desired.
