Maple Bacon Butternut Squash
Roasted until tender and tossed with crispy bacon, fresh herbs, and a drizzle of maple syrup, this sweet-and-savory dish is easy to make, full of flavor, and perfect served warm as a side or cozy main dish.
Ingredients
- (2-3) Butternut Squash
- Smoked Pork Bacon (Sugar Free)
- Raw Salted Butter
- Pint Organic Maple Syrup - Grade A
- Fresh Chives or Sage
- Salt & Pepper
Directions
Preheat the oven to 400°F. Cut the squash in half and scoop out the seeds and pulp. Place the halves on a baking sheet, skin side down.
In a skillet, cook the bacon until crispy, then remove and set aside. Add the butter to the bacon grease and melt, then stir in fresh chopped sage or chives for about a minute. Remove from heat.
Pour the butter-herb mixture over the squash, letting it fill the hollow center, and use a basting brush to coat the squash evenly. Sprinkle with salt and pepper.
Bake for about 50 minutes, or until the squash is fork-tender. Use a fork to gently break apart the squash, then sprinkle with chopped bacon, fresh herbs, and a drizzle of maple syrup. Serve warm and enjoy!
