Delicious Ham and Potato Soup

Step 1
Peel and dice about 3 1/2 cups of potatoes. Dice about 3/4 cup cooked ham, 1/3 cup celery, and 1/3 cup onion. Mince 1 to 2 cloves of garlic, or to taste.
Step 2
Place the potatoes, ham, celery, onion, and garlic in a stockpot. Add about 3 1/4 cups of broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 10 to 15 minutes.
Step 3
Season with salt and pepper to taste. Add sage, thyme, and parsley. Reduce heat to low and let the soup simmer gently.
Step 4
In a separate saucepan, melt about 5 tablespoons of butter over medium-low heat. Stir in about 5 tablespoons of flour and cook, stirring constantly, until smooth, about 1 minute.
Step 5
Slowly whisk in about 2 cups of milk. Continue cooking and stirring until the mixture thickens, about 4 to 5 minutes.
Step 6
Pour the milk mixture into the stockpot and stir well. Cook gently until the soup is heated through and well combined.
Step 7
Taste and adjust seasoning as needed. Serve warm.
