Shingled Sweet Potatoes
Tender sweet potato slices roasted to golden perfection, layered with slivers of candy onions and brushed with fragrant rosemary butter. Slow-roasted until soft, then finished under high heat for a crisp, caramelized top, this dish makes a comforting, flavorful addition to any meal.

Ingredients
- 2 lb. Sweet Potatoes
- Raw Unsalted Cultured Butter
- 2lb - Candy Onions
- Fresh Rosemary
- Salt & Pepper
Directions
Preheat oven to 400°F.
In a small bowl, combine melted butter and crushed rosemary. Pour about 2 tablespoons of the mixture into the bottom of a 2-quart baking dish. Arrange the potato slices vertically in the dish, adding a sliver of onion every few slices. Brush the remaining butter mixture over the tops of the potatoes and season generously with salt and pepper.
Cover the dish with foil and roast for 1 hour, until the potatoes are tender.
Increase the oven temperature to 450°F, remove the foil, and roast an additional 10–15 minutes, until the tops are golden brown and crisp.
