Beef tallow (enough to cover potatoes in the pan)

Salt, to taste

Prepare the tallow:
Melt beef tallow in a large skillet or frying pan over medium heat. -
Cook the potatoes:
Add the potato slices to the hot tallow. Fry, stirring occasionally, until golden brown and crispy on the outside and tender inside. -
Season:
Remove the fries from the pan and drain on a paper towel. Sprinkle with salt to taste. -
Serve:
Serve immediately as a side or snack while hot and crispy.
