4 One Pot Meals to Try at Home While You Attempt to Juggle it All

Life can feel hectic at times. Whenever this happens, it’s often a human instinct to cut corners on your diet. There are easier options that don’t require from-scratch ingredients so why not save myself some time and opt for those? The problem is that “easier” masquerades as “better” in the short term. Your nerves literally send a “happy signal” as a result of the time you saved.

So you cut corners again. And again. BUT when we look at the sum of those moments, they’re not as great as those happy signals chalk them up to be. AND you sadly didn’t save that much time even in the long run (you know, time, the one thing you were making the health sacrifice for), which will become extra apparent once you try these simple and healthy recipes that save you time, not just during preparation, but also after the meal since they use just a single pot or pan.

Dutch Oven Peach + Maple Chicken Thighs

You’ll need:

  • 2 Tbs minced garlic
  • 1/2 cup minced yellow onion
  • 1 Tbs olive oil
  • 2 lbs chicken thighs
  • 2 tsp sea salt flakes, (use less if using regular salt)
  • 1/2 tsp ground black pepper
  • 1 tsp rosemary
  • 1/2 tsp thyme
  • 1/2 tsp herbes de provence
  • 1/3 cup lemon juice
  • 1/3 cup maple syrup
  • 1 peach, peeled and diced
  • 1 cup sliced mushrooms
  • 3 carrots, peeled and cut into 1-2 inch pieces
  • 1/2 of a peeled sweet potato, cut into 2 inch pieces

Sheet Pan Steak & Veggies

You’ll need:

  • 2 pounds baby red potatoes
  • 16 ounces broccoli
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper, to taste
  • 2 pounds (1-inch-thick) top sirloin steak, patted dry

One-Pot Pasta with Ground Turkey and Spinach

You’ll need:

  • 1 tablespoon canola oil
  • 1 pound lean ground turkey
  • 2 teaspoons kosher salt, divided
  • 3 teaspoon ground cumin, divided
  • 1 teaspoon oregano
  • 1 1/2 teaspoon freshly ground black pepper, divided
  • ¼ teaspoon crushed red pepper flakes
  • 1 medium onion, diced
  • ½ cup red bell pepper, diced
  • 3 cloves garlic, minced or pressed
  • 6 ounces diced tomatoes
  • 4 ounces green chilies
  • 1 teaspoon chili powder
  • 10 ounces dried penne pasta
  • 3 cups chicken broth
  • ¼ cup heavy cream
  • 4 cups fresh baby spinach (2 big handfuls)
  • ½ cup shredded cheese
  • Chopped cilantro, for garnish

Orange-Glazed Pork with Sweet Potatoes

You’ll need:

  • 1 pound sweet potatoes
  • 2 medium apples
  • 1 medium orange
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup orange juice
  • 2 tablespoons brown sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 2 pork tenderloin
