Try this smoked version of grass-fed beef tongue! The tongue possesses nutritional qualities similar to its organ meat family members, like the liver. In many cultures, it is not only a part of traditional cuisine—it can even be considered a delicacy. Like the liver and other organ meats, the tongue can be tough, so it's wise to use your preferred method for tenderizing and/or prepare it using a slow cooker—that is, over a long period of time at a low temperature.

This particular tongue has been smoked at 145°F for 3 to 3.5 hours, which imparts a rich, savory flavor while also helping to tenderize the meat. You can find a step-by-step recipe for smoked beef tongue here.

Tacos de Lengua are a fun meal that you can sometimes even trick your kids into enjoying. Simply slow cook the tongue, make an array of additional toppings using fresh, local vegetables and fruits if available, then let everyone create their own taco and enjoy!
