This moist, soft, creamy, surface-ripened cheese is one of our favorites. Like most of our dairy products it is made from grass fed Dutch Belt cows milk. The cheese is pasteurized and aged for 2-6 weeks to give it a soft creamy texture, similar to the more commonly consumed brie. You may even choose to let it age in the refrigerator for a few more weeks, which will result in a softer and creamier texture. It is also excellent when drizzled with honey and baked gently in the oven. Consider pairing it with local apples or other fruit, or simply spreading it on artisanal bread or crackers.
