The tongue possesses nutritional qualities similar to its organ meat family members, like the liver. In many cultures, it is not only a part of traditional cuisine, it can even be considered a delicacy. Like the liver and other organ meats, the tongue can be tough so it's wise to use your preferred method for tenderizing and/or prepare it using a slow cooker, that is over a long period of time at a low temperature. Tacos de Lengua are a fun meal that you can sometimes even trick your kids into enjoying. Simply slow cook the tongue, make an array of additional toppings using fresh, local vegetables and fruits if available, then let everyone create their own taco, and enjoy! It's also great sliced and added to sandwiches, and some opt for curing or smoking the tongue.
