Beef Tenderloin, Whole (approx. 4 lb)
The most tender cut on the animal, and one of the most prized. Our 100% grass-fed beef tenderloin comes from cattle raised entirely on pasture, never fed grain, which gives it a clean, rich flavor and a fine, buttery texture that needs very little help in the kitchen.
Because the tenderloin comes from a muscle that does little work, it stays exceptionally soft and lean. It's the same cut that filet mignon is sliced from, so you can roast it whole for a showstopping centerpiece or portion it yourself into thick filets. Either way, it cooks quickly and rewards a light touch. Sear it hot, keep it on the rare side of medium, and let it rest before slicing.
Each whole tenderloin weighs approximately 4 pounds, enough to feed six to eight people or to cut into eight or more generous filet steaks. Vacuum sealed and frozen at peak freshness.
